Herb-Crusted Ribeye Steak with Bone Broth Reduction

Ingredients:

For the steak:

  • 2 ribeye steaks (about 1 inch thick)
  • 2 tablespoons ghee or clarified butter
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 2 cloves garlic, minced

For the bone broth reduction:

  • 2 cups beef bone broth
  • 1 tablespoon ghee or clarified butter
  • 1 clove garlic, minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, finely chopped

Instructions:

Prepare the Steaks:

  • 1.1. Preheat your oven to 400°F (200°C).
  • 1.2. Season the ribeye steaks with sea salt and black pepper on both sides.
  • 1.3. Mix the chopped rosemary, thyme, and minced garlic in a small bowl.
  • 1.4. Rub the herb mixture onto both sides of the steaks.

Sear the Steaks:

  • 2.1. Heat a cast-iron skillet over medium-high heat and add the ghee or clarified butter.
  • 2.2. Once the skillet is hot, add the ribeye steaks and sear for about 2-3 minutes on each side until a nice crust forms.
  • 2.3. Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes, or until the steaks reach your desired level of doneness (use a meat thermometer for accuracy: 130°F for medium-rare, 140°F for medium).

Make the Bone Broth Reduction:

  • 3.1. While the steaks are in the oven, heat another pan over medium heat and add the ghee or clarified butter.
  • 3.2. Add the minced garlic and sauté until fragrant, about 1 minute.
  • 3.3. Pour in the beef bone broth and bring to a simmer.
  • 3.4. Add the chopped rosemary and thyme.
  • 3.5. Reduce the broth by half, letting it simmer for about 10-15 minutes, stirring occasionally.

Serve:

  • 4.1. Remove the steaks from the oven and let them rest for 5 minutes.
  • 4.2. Slice the steaks and arrange them on plates.
  • 4.3. Drizzle the bone broth reduction over the steaks.

Tips:

For added nutrition, consider adding some organ meats to your meal, such as liver pâté or grilled marrow bones.

Pair this dish with a side of grilled or roasted vegetables if you incorporate some plant-based foods into your diet.

Enjoy your herb-crusted ribeye steak with a flavorful bone broth reduction, a perfect meal for a healthy carnivore diet!
